How do I know if an attack will pass through my watchtower radius! - Attacks that will be tagged by your watchtowers will have an "eye" icon next to the command. The attack will be tagged once it passes into your watchtower range.

I just conquered a new village - will my watchtower tag the attacks that are incoming to it? - Only attacks that are sent while you own the village will definitely be tagged. Anything sent before you conquered the village will likely not be tagged - you can tell by looking for the "eye" icon next to the command.
